Garlic-Butter Roasted Beets

Mashed with a touch of melted butter and fresh herbs, the garlic coats each bite with savory flavor. You can make this recipe with red beets, golden beets or a colorful mix for a vibrant presentation. Easy enough for weeknight cooking but special enough for a holiday spread, this recipe is a delicious way to showcase the earthy root vegetable.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 small head garlic

  • 1 teaspoon extra-virgin olive oil plus 1 tablespoon , divided

  • 4-5 large beets, peeled and cubed (1-inch; about 6 cups)

  • 1 teaspoon kosher salt

  • 1 tablespoon unsalted butter, melted

  • 1 tablespoon chopped fresh herbs such as tarragon, dill or parsley

  • teaspoon ground pepper

Directions

  1. Preheat oven to 400°F.

  2. Peel and discard papery outer layer of garlic head. Cut about ¼ inch from the top of the cloves. Place the garlic on a piece of foil large enough to enclose the head. Drizzle with 1 teaspoon oil; seal the foil securely. Place on a large rimmed baking sheet and roast for 5 minutes.

  3. Meanwhile, combine cubed beets, the remaining 1 tablespoon oil and 1 teaspoon salt in a large bowl; toss to coat. After the garlic has roasted for 5 minutes, add the beets to the pan, spreading them in an even layer. Roast, stirring once, until tender when pierced with a fork, 35 to 40 minutes more.

  4. Remove the garlic from the foil; let stand until cool enough to handle. Combine 1 tablespoon melted butter and 1 tablespoon chopped herbs in a small bowl. Squeeze the roasted garlic cloves out of their skins into the butter mixture; discard skins. Mash the mixture with a fork (it will be lumpy). Spoon the garlic butter over the beets and stir to coat. Season with ⅛ teaspoon pepper.
