Original recipe (1X) yields 4 servings 8 ounces whole-wheat spaghetti 2 tablespoons extra-virgin olive oil 8 ounces cremini mushrooms or other mushrooms, quartered 4 cloves garlic, minced 8 ounces frozen spinach, thawed 1 cup whole-milk ricotta cheese, divided 1¼ teaspoons kosher salt ½ teaspoon ground pepper Directions Bring a large pot of water to a boil.
