Original recipe (1X) yields 4 servings 1 large head cauliflower (about 2¾ pounds) 2 tablespoons extra-virgin olive oil 1 teaspoon Italian seasoning ½ teaspoon ground pepper ¼ teaspoon plus ⅛ teaspoon salt, divided 4 tablespoons unsalted butter, at room temperature ¼ cup finely chopped mixed fresh tender herbs (such as basil, chives, dill and/or flat-leaf parsley) 1 teaspoon grated lemon zest 1 teaspoon lemon juice 1 teaspoon lower-sodium Worcestershire sauce 2 medium cloves garlic, grated (about ½ teaspoon) ¼ teaspoon crushed red pepper Directions Preheat oven to 425°F. Remove any outer leaves from 1 cauliflower head; trim stem. Place the cauliflower on a cutting board, stem-side down. Cut 4 (1-inch-thick) slices from the center of the head. Arrange the cauliflower steaks on a large baking sheet in a single layer (reserve remaining cauliflower for another use). Sprinkle both sides with 1 teaspoon Italian seasoning and ½ teaspoon pepper. Roast, flipping once halfway, until browned and tender, 30 to 35 minutes. Sprinkle with ¼ teaspoon salt. Meanwhile, combine 4 tablespoons softened butter, ¼ cup herbs, 1 teaspoon each lemon zest, lemon juice and Worcestershire, the grated garlic, ¼ teaspoon crushed red pepper and the remaining ⅛ teaspoon salt in a medium bowl.
