These cauliflower steaks with herb butter are a delicious side that pairs well with any main. Roasting the cauliflower leads to nice browning and brings out the natural sweetness of the vegetable. Lemon zest and juice in the herb butter adds a pop of brightness and is so good, you’ll want to use it on other dishes like roasted potatoes or salmon.

Ingredients

Original recipe (1X) yields 4 servings

  • 1 large head cauliflower (about pounds)

  • 2 tablespoons extra-virgin olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon ground pepper

  • ¼ teaspoon plus teaspoon salt, divided

  • 4 tablespoons unsalted butter, at room temperature

  • ¼ cup finely chopped mixed fresh tender herbs (such as basil, chives, dill and/or flat-leaf parsley)

  • 1 teaspoon grated lemon zest

  • 1 teaspoon lemon juice

  • 1 teaspoon lower-sodium Worcestershire sauce

  • 2 medium cloves garlic, grated (about ½ teaspoon)

  • ¼ teaspoon crushed red pepper

Directions

  1. Preheat oven to 425°F. Remove any outer leaves from 1 cauliflower head; trim stem. Place the cauliflower on a cutting board, stem-side down. Cut 4 (1-inch-thick) slices from the center of the head. Arrange the cauliflower steaks on a large baking sheet in a single layer (reserve remaining cauliflower for another use).

  2. Brush the cauliflower steaks with 2 tablespoons oil. Sprinkle both sides with 1 teaspoon Italian seasoning and ½ teaspoon pepper. Roast, flipping once halfway, until browned and tender, 30 to 35 minutes. Sprinkle with ¼ teaspoon salt.

  3. Meanwhile, combine 4 tablespoons softened butter, ¼ cup herbs, 1 teaspoon each lemon zest, lemon juice and Worcestershire, the grated garlic, ¼ teaspoon crushed red pepper and the remaining ⅛ teaspoon salt in a medium bowl. Beat with an electric mixer on medium speed until fully combined, about 30 seconds. Spread the butter mixture over the cauliflower steaks, about 1½ tablespoons each.
