Amish Broccoli Salad

This creamy broccoli and cauliflower salad has a fabulous crunch. The salad holds well and is perfect for potlucks and picnics. Our version has considerably less sugar than most Amish salad recipes and is lighter because we use a mixture of low-fat Greek yogurt and mayonnaise for the dressing.

Ingredients

Original recipe (1X) yields 6 servings

  • ¼ cup mayonnaise

  • ¼ cup low-fat plain Greek yogurt

  • 1 tablespoon lemon juice

  • 1 teaspoon sugar

  • ¼ teaspoon ground pepper

  • 2 cups chopped broccoli (florets and peeled stems)

  • 2 cups chopped cauliflower

  • ½ cup shredded sharp Cheddar cheese

  • 2 slices cooked bacon, chopped

  • ¼ cup finely chopped red onion

Directions

  1. Whisk mayonnaise, yogurt, lemon juice, sugar and pepper together in a large bowl. Add broccoli, cauliflower, cheese, bacon and onion; stir to coat.

Tips

To make ahead: Refrigerate for up to 2 days.
