This stunning yet easy appetizer recipe infuses creamy ricotta with fresh herbs and lemon. Serve with whole-grain crackers and cut-up vegetables or use as a spread for sandwiches or sauce for pasta.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 (15-ounce) container part-skim ricotta cheese

  • 2 tablespoons chopped fresh thyme, plus more for garnish

  • 1 teaspoons minced shallot or 3 tablespoons minced fresh chives

  • 1 tablespoon grated lemon zest

  • ¼ cup lemon juice

  • 1 teaspoon ground pepper

  • ¼ teaspoon salt

  • 2 teaspoons extra-virgin olive oil

Directions

  1. Combine 1 container ricotta, 2 tablespoons thyme, 1 tablespoon shallot (or 3 tablespoons chives), 1 tablespoon lemon zest, ¼ cup lemon juice, 1 teaspoon pepper and ¼ teaspoon salt in a food processor. Puree until smooth.

  2. Transfer to a serving bowl; swirl the top with the back of a spoon. Drizzle with 2 teaspoons oil. Garnish with additional thyme, if desired.
