Honey Feta Phyllo Dough Bites- these are sweet and savory, crunchy and buttery or simply said- they are the bites!

Ingredients: 
 • 12 oz feta (I’m using Bulgarian Sheep feta) 
 • 12 phyllo dough sheets 
 • 1 stick (1/2 cup) salted butter 
 • 2 tbs sesame seeds 
 • 2 tbs (hot) honey 

Method: 
 • 1. Preheat oven at 400 F;
 • 2. Melt butter and set aside;
 • 3. Cut feta into 12 rectangles; 
 • 4. Brush butter on a phyllo sheet, fold it twice, place the feta and wrap it; brush more butter on top, repeat for all of them; 
 • 5. Sprinkle sesame seeds on top and bake for about 15-20 mins or until golden; 
 • 6. Drizzle (hot) honey and enjoy!

Ingredients
 • 2 apples tart apples like Braeburns or Granny Smith
 • ½ lemon juiced
 • 1 stick butter
 • 6 sheets phyllo dough
 • ¼ cup apricot jam
 • 3 tablespoon brown sugar
 • 1 ¼ teaspoon cinnamon separated into 1 teaspoon & ¼ tsp
 • 1 egg optional

Instructions
 • Peel, core, and slice the apples. Toss in a bowl with the juice of half a lemon.
 • Melt the stick of butter.
 • Preheat to 350F.
 • Prepare your surface with a clean towel. Take one sheet of phyllo dough, place it on the towel, and brush with melted butter. Cover the unused phyllo with a damp towel between use.
 • Top with another sheet of phyllo dough, and brush with melted butter. Repeat until you have 6 sheets stacked.

Ingredients (makes 20-24)
 • 10 oz or 350 g low moisture mozzarella, grated 
 • 6 oz feta cheese 
 • 2 lb frozen spinach, thawed and drained
 • Salt to taste
 • 100 g phyllo pastry, plus more as needed 
 • 1 egg, can be substituted with oil or butter
 • Sesame seeds and flaky salt

Oil or butter, for brushing 

Instructions 

1. Heat the oven at 400°F or 205°C. 

3. Combine the cheese, spinach and pinch of salt in a bowl. Whisk the egg in a bowl.

4. Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on your work surface, drizzle a bit of oil or butter on top, then place another sheet on top.

Filling
 • 24 ounces frozen spinach, thawed and liquid squeezed out very well. 
 • 1/3 cup cream cheese ( add more cheese if you like) 
 • 1/2 cup feta cheese
 • 1/4 cup parmesan 
 • 1/4 cup fresh dill 
 • salt to taste 
 • black pepper to taste 
 • 1 teaspoon garlic powder 
 • 1/2 teaspoon red crushed pepper
 • 1/4 - 1/3 cup unsalted butter, melted

I used the @athens_foods phyllo dough 16 ounce box and I only used one bag. Please make sure when using the phyllo sheets to have it covered with a clean towel between each use to make sure the sheets do not get dry.

Feta & Pistachio Phyllo Bites ❤️ they are so good + easy to make! These yield 12 bites! These were inspired by the rolled crispy phyllo by @lilygbakes Ingredients: * 1-16 oz package phyllo (18 sheets). * 8 oz feta (slice lengthwise into long rectangles). * 8 oz butter (melted, you might have some leftover). * 1/3 cup fig preserves. * 3 tbsp chives (chopped). * 1/4 cup chopped pistachios. * Honey to taste (about 1/2-1 tbsp per bite). * Chipotle powder to taste (I did about 1 tsp). * Salt and pepper to taste. Assemble Rolls: 2. Preheat oven to 400°F (200°C). Lay a half-sheet of phyllo on a clean surface, brush lightly with butter or oil, and add a tablespoon of the cheese mixture near one end. Roll up, tucking in sides to form a neat roll. Repeat with remaining phyllo and filling.  Bake Rolls: 3. Place rolls on a lined baking sheet and bake for 15-20 minutes, until golden and crispy. 1hr · 1 serving     Ingredients   • 200g pistachio  • 100g almonds  • 1 tsp ground cinnamon   • 300g gee/butter (melted)  • Phyllo dough sheets  • Finely ground pistachios to serve  Syrup   • 3 cups granulated sugar   • 2 cups water  • 1 tbsp lemon juice  • 2 cinnamon sticks  On medium/high heat dissolve sugar in water. Once it begins to boil, add lemon and cinnamon, reduce heat and simmer for 15 mins. Set aside to cool in heatproof jar.  Make pastry rolls with filling and brush with butter.
