Super fluffy donuts, filled with creamy vanilla Bavarian cream, and rolled in vanilla sugar, I’m pretty sure these Bavarian Cream donuts are the best thing I’ve ever made.

Ingredients

Bavarian Cream
 • 120 milliliters whole milk
 • 1 vanilla bean or 1 teaspoon vanilla extract
 • 2 egg yolks large eggs
 • 30 grams granulated sugar
 • 200 milliliters heavy cream cold, more as needed to make a stiff filling

Donuts
 • 250 grams all purpose flour
 • 30 grams granulated sugar
 • 7 grams instant yeast
 • 125 milliliters milk
 • 1 egg large, room temperature
 • 20 grams butter softened
 • 1 teaspoon vanilla extract
 • 1/2 teaspoon salt

Frying
 • 1 liter vegetable oil

Coating
 • 75 grams granulated sugar
 • 1 vanilla bean

Bavarian Cream Donuts
Ingredients 180g bread flour or all purpose flour 3g instant dry yeast 1/4 tsp salt 30g sugar 45g condensed milk 85g milk of choice In a large bowl, combine all bread ingredients except for butter. Then mix until combined. Cover and let sit for 20mins. Then add in soften butter and knead until the dough comes together, about 10 - 12 mins. Smooth the dough. Divide dough into 12 portions and rolled into balls. Let rest for 15 mins. 1/3 cup chopped dried cranberries For the filling 100g room temperature cream cheese 20g sugar 1/2 tsp pure vanilla extract Pinch of salt Whisk all filling ingredients until smooth and creamy. Flatten the cranberry bread dough, pip the filling in the centre. Gather up the edges to seal, make sure the bottom is tightly closed and bake the buns for 3 mins at 180c.
