 • 60g unsalted butter, softened and cubed⁣

Chocolate espresso filling:⁣
 • 70g unsalted butter⁣
 • 80g dark Chocolate⁣
 • 65g powdered sugar⁣
 • 18g dark cocoa powder⁣
 • 1 tsp instant espresso powder⁣
 • Pinch of salt⁣

Brown sugar espresso glaze:⁣
 • 50g brown sugar ⁣
 • 50g water⁣
 • ½ tsp instant espresso powder⁣

Instructions⁣

Dough:⁣
 • Add all ingredients except butter to the bowl of a stand mixer fitted with a dough hook. ⁣⁣
 • Knead on low-medium for 10 minutes. ⁣⁣
 • Add butter in cubes, one cube at a time. ⁣⁣
 • Knead for another 10-20 minutes until the dough passes the window-pane test. ⁣⁣
 • Place dough in a clean, lightly oiled bowl. ⁣⁣
