Ingredients

- 4 eggs @vitalfarms

- 1/2 cup milk of choice

- 2 tsp vanilla extract

- 4 tbsp pure maple syrup

- 2 tbsp baking powder

- Pinch of salt

- 1.5 cups of gf flour @kingarthurbaking

- Toppings such as berries, chocolate chips, apples, shredded coconut.

NOTE: use a regular size ice cube tray so that the pancakes don’t take forever to cook!

Instructions

1. To a bowl, add eggs, milk, maple syrup, vanilla and whisk.

2. Then, add baking powder, salt, and flour. Whisk to incorporate. Don’t over mix.

3. Pour batter into a regular size ice cube tray. Add toppings and freeze.

4. When ready to use, heat some oil on a pan on LOW heat and add the frozen batter.  For me, meal prepping isn’t about “dieting” or being “restrictive”; it’s about making life easier while aiming to fuel my body with diverse nutrients. 
 For some, this may look like prepping some veggies or salad ingredients for “quick construct” meals, however for others that may look like actually prepping some meals and/or snacks. 
 By prepping just a few meals ahead, I keep it simple while aiming for variety, for the remainder of my week. Plus, rotating different plants throughout the week keeps my gut happy and keeps my meals exciting!

Per bowl (multiply by the servings you plan to make):  -1 egg  -50 g yogurt unflavoured (or vanilla)  -70 ml milk I use almond but any milk will work  -35 g flour all purpose  -25 g protein powder vanilla  - drizzle of honey (~1 tsp) (there is very little sugar in this recipe for calorie reasons but you can add as much sweetner as you want, depending on how sweet you like things)  - 1/2 tsp baking powder  Top with fruits of your choice!!  Bake for 20-25mins at 180c/350f  You can top your baked pancake bowl with more honey/maple syrup if you wish to (optional)  Per bowl (1 serve): These were my macros but it will depend on which protein powder you use, which yogurt you use, milk, amount of sweetner etc..  Calories: 338 Calories  Carbohydrate: 32g  Protein: 31g  Fat: 8.5g  #MyStyle25
