PISTACHIO TIRAMISU - vegan & high protein

Ingredients:

150g pistachio butter

100g maple syrup

pinch of salt

800g (2 packets) silken tofu

50ml almond milk

Freshly brewed coffee

ladyfingers

Toppings:

Cocoa powder

Chopped pistachios

1. Blend the pistachio butter with the maple syrup & pinch of salt to make a pistachio cream. Add the silken tofu and milk & blend again until smooth. Taste to see if the sweetness fits & set aside.

2. Brew a cup of coffee and prepare the baking dish. Now dip the ladyfingers in coffee & line the baking dish with them. Put a layer of cream on top, then another layer of ladyfingers and again a layer of cream (2x cream and 2x ladyfingers).

3. Sprinkle with cocoa powder & add chopped pistachio nuts. It is best to let it sit over
