The flour you use to feed your starter will give its texture, smell and ultimately the profile of your bread.  I have taken my white wheat starter and fed it in the same way with 3 different types of flour:  🌾Dark rye flour (yes, there is also a light rye version)  🌾Stoneground whole wheat (otherwise known as wholemeal)  🌾Organic strong white (aka bread flour)  🌾Same feeding ratio  20g white wheat starter + 80g water + 80g flour (1:4:4)  🌾Video was recorded 8h after feeding. The whole meal one collapsed the most, followed by the rye flour. While the white wheat one was still keeping its shape.  Let’s check together on their texture  The rye flour gives a chocolate mousse texture to your starter. It feels light and fluffy, not much elasticity, it separates quite easily  The whole wh
