Ingredients: • 250 g wheat flour • 100 g sourdough flour • 250 g water • 80 g sourdough starter • 7 g salt  Instructions:  Mix flours, water, and starter. Rest 40 min.  Add salt (dissolved in a bit of water), knead 3–4 min.  Fold the dough 4 times, every 30 min.  Shape when volume increases ~50%, coat with sesame, rest 30–40 min, then refrigerate.  Bake after 12–18 hrs in fridge:  – 15 min at 230°C (with steam)  – 25 min at 210°C (without steam)   @sweetbyzm
