Ingredients:  • 2.5 cup cubed butternut squash  • 1/2 onion  • 1/2 cup vegetable stock  • 6-8 sage leaves  • 3 tbsp butter  • 1/2 cup parmesan cheese  • 1/4 cup walnuts  • Heavy cream  • 1/2 pound pasta  Directions:  • Add cubed butternut squash and slices of half an onion to a baking pan. Drizzle olive oil and generously season with salt, pepper, and garlic powder. Toss until coated.  • Cook in the oven at 400 degrees for about 20 minutes or until squash is soft  • Cook pasta in salted water until al dente, reserving a cup of the water  • To a blender, add the roasted butternut squash & onions with 1/2 cup vegetable stock and 1/2 cup reserved pasta water  • Melt butter in a large pan on low heat until it starts to brown. Add sage leaves and walnuts and cook until toasted and lightly cr
