HEALTHY MAKHANA BHEL WITH MAGIC CHUTNEY - Why I call it magic chutney is because this chutney has all the tastes - spicy, sweet, sour, salty etc all in one chutney. And you can store this chutney in fridge easily for 15 days. And overall just few drops of oil in this nutritious Makhana Bhel makes it a healthy dinner or snacking choice. Here is the recipe -
 • For Magic Chutney
 • -in a pan, add 1/4 cup water
 • - 2 tbs tamarind pulp
 • - 1/4 cup jaggery
 • - 1/2 tsp chili powder, 1/2 tsp roasted cumin seeds powder, 1/2 tsp dry ginger powder and some salt
 • - 1 garlic clove optional (can skip if you’re Jain)
 • - bring everything together on medium flame till 2 boils - if required add more water - keep stirring
 • - chutney should be thick and not watery else Makhana Bhel will get soggy

 • ¼ cup cucumber finely chopped

 • 2 tbsp potatoes boiled and cubed (optional)
 • 1-2 tbsp peanuts roasted
 • 2 tbsp coriander leaves finely chopped
