This Ground Beef Stroganoff is a creamy, comforting, and delicious dinner you can make in 30 minutes. Instead of using fresh mushrooms, I like to use cream of mushroom soup instead. It makes the entire recipe much more affordable and tastes even better!

    About This Recipe

I LOVE beef stroganoff. When I was a kid, I used to make it for dinner for my brother and me. We would use those hamburger helper boxes and mix them with butter, milk, and ground beef.

To be completely honest, I've never had legit beef stroganoff made with whole chunks of beef. Maybe one day I will try it, but right now, I don't feel the need to since the ground beef version is already so good. Plus, I grew up eating the ground beef version, so it's more nostalgic for me.

For this recipe, I'm making it 100% from scratch, with the exception of using canned cream of mushroom soup. I like using canned mushroom soup because it means you don’t need to buy fresh mushrooms and a carton of cream. It actually tastes better, in my opinion, and it's also way cheaper. One cream of mushroom soup costs only $1, whereas fresh mushrooms and cream would cost like $8.

    Ingredients

required ingredients prepped in bowls; can of cream of mushroom soup.

These are all the ingredients you will need. The key ingredients are ground beef, beef broth, cream of mushroom soup, sour cream, and egg noodles. For the beef broth, I just mixed Better than bouillon roasted beef base with water.

For the noodles, egg noodles are traditional, but really, you can use whatever noodles/pasta you want. I have made this many times with rotini and macaroni and it comes out just as good.

    How to make it

ground beef and onions cooking in skillet.

STEP 1: Heat the oil in a large skillet over high heat. Add the ground beef and onions and cook until the beef is no longer pink and the onions are translucent.

garlic and flour stirred into ground beef mixture.

STEP 2: Add the garlic and cook for about 30 seconds to release its flavor. Then, stir in the flour, which will thicken the sauce later.

cream of mushroom soup, beef broth, and seasonings added to skillet.

STEP 3: Stir in the rest of the sauce ingredients and bring to a simmer. It should be very creamy, like the picture above. I usually let the sauce sit on the lowest heat setting while I cook the egg noodles.

egg noodles draining in strainer over pot it was cooked in.

STEP 4: Bring a pot of salted water to a boil and cook the noodles according to the package directions. Drain in a strainer or colander.

STEP 5: Toss the noodles with the sauce. Enjoy! This recipe makes enough for about 4-6 people. My wife and I ate this for dinner and had leftovers for a few days.

Delicious, I had all the ingredients and wanted something quick, this was it. I think the only stroganoff I’d ever had was hamburger helper and this was so so much better. On the weekly supper meal planning for sure, thank you for sharing this delicious recipe.

You can but just make sure when you reheat it to heat it up low and slow because the sour cream could separate. If that does happen you could just mix some fresh sour cream in.

Perfect. I did saute mushrooms beforehand and then added them in with the soup. Served over white rice because I didn't have any egg noodles.
