    French Toast Casserole

    This French Toast Casserole is my new favorite way to make French toast. All you do is combine all the ingredients in a casserole dish and bake it for 45-50 minutes. I love this method because it frees up your stovetop so you can make other breakfast items like scrambled eggs and bacon. The top of the casserole is garnished with a delicious brown sugar streusel.

    When I was a kid I used to make French toast every weekend with my dad. I would be in charge of making the French toast, while my dad would make fried eggs and ham. The ham we used was actually leftover ham slices from our pizza restaurant :^).

    The thing I love about this recipe is that it’s cooked completely in the oven. No need to monitor the stovetop, and you can cook a huge batch at once. One of my least favorite things about traditional French toast is that you have to make each one individually, and you end up wasting so much time just waiting for them to cook.

    The recipe makes a large batch. If you're making this for two people, be prepared to eat this for 2-3 days in a row. But if you're making this for a family, you'll probably have enough for everyone! At its core, French toast casserole is just a bread pudding. If you are familiar with how to make bread pudding, then this recipe should be easy peasy for you as it's very similar.

    How to make it

    STEP 1. Combine the filling ingredients in a large bowl and whisk thoroughly so that the egg is evenly dispersed.

    STEP 2. Toss the ingredients with the bread cubes. Make sure to do this step quickly so that each piece of bread is evenly coated. It's okay if some of the bread pieces break.

    STEP 3. Transfer to a greased casserole dish.

    STEP 4. Make the streusel and scatter it on top.

    STEP 5. Bake until the inside is set and the top is golden brown. Most recipes suggest 30-35 minutes of baking, but I found the bread needed at least 45 minutes for the egg to cook through. I used a thermometer and pulled it out when the inside reached 170°F.

    Ingredients
      

    For the filling

    • 7 large eggs
    • 2 cups milk
    • ¼ cup packed brown sugar
    • 2 teaspoons vanilla extract
    • 1 teaspoon cinnamon
    • ½ teaspoon salt
    • 1 loaf French bread (about 1 pound; cubed)

    For the topping

    • ¼ cup packed brown sugar
    • ¼ cup flour
    • ½ teaspoon ground cinnamon
    • 2 tablespoons cold butter

    Instructions
     

    • In a large bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and salt. Toss this with the bread cubes until evenly coated then transfer to a greased casserole dish.
    • In a small bowl, combine the brown sugar, flour, and cinnamon. Use a fork to work in the butter until you have a texture resembling coarse bread crumbs. Sprinkle this mixture over the casserole.
    • The casserole can be refrigerated overnight or baked immediately. If using the overnight method, cover the casserole with plastic wrap and refrigerate.
    • When you're ready to bake, preheat the oven to 375°F and bake for 45-50 minutes, until the filling is set and the top is golden brown. Feel free to top with powdered sugar and/or maple syrup. Enjoy!
