 • 1 stalk celery sliced into quarters lengthways, then finely diced
 • 1/4 red onion very finely diced
 • 1/2 cup walnuts roughly chopped
 • 1.5 tbsp dill finely chopped
 • 3 tbsp dill pickles finely chopped
 • Sauce
 • 2/3 cup mayonnaise plant-based
 • 2 tsp dijon mustard
 • 1 tbsp lemon juice
 • 1/2 tsp garlic powder
 • 1/2 tsp salt
 • pepper to taste

The Tofu Banh mi 🥖 - a tasty (spicy) sandwich inspired by the Vietnamese classic. 

In a bowl:
 • 2 small carrots (julienned)
 • 1/2 cucumber (peeled)
 • 1 chilli (sliced)
 • 2 tbsp rice vinegar
 • 1 tbsp sugar

pinch salt

Tofu:
 • 1 block firm tofu
 • 1 tbsp sesame oil
 • 2 tbsp soy sauce
 • 2 tbsp agave syrup

1 tbsp mayo

Other:
 • fresh coriander
 • 1/2 lime
 • sriracha mayo
 • 1 large baguette

RECIPE (3-4 servings, 45min prep time):

-400g firm tofu

Pat dry it and shred with a grater.

-2 Tbsp soy sauce

-1 Tbsp oil

-2 Tsp cumin

-1 Tsp Paprika

-salt to taste

Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then).

Sauce:

-1 onion

-3 cloves garlic

Fry in some oil until softened.

-1 Tsp cumin

-1 Tsp Paprika

-1/2 Tsp chili powder

-2 Tbsp tomato paste

Roast 2-3mins

-1/3 cup (80ml) pineapple juice

-1/2 Tbsp soy sauce

Stir it in and bring to a bubble.

Then reduce the heat and stir in the baked tofu.

“Salsa verde”:

-a bunch cilantro or parsley

-2 cloves garlic

-4 Tbsp vegan yogurt

-4 Tbsp vegan mayo

-1/2 lemon

-1 Tsp cumin

-1 Tsp agave

-salt to taste

Blend until smooth.

This vegan tofu banh mi is going to be the sandwich of the summer ☀️. The shredded tofu is super crispy and goes well with the pickled carrots and daikon and sriracha mayo.
