Recipe: Spinach Soup

Ingredients:
• - 500-600gm Spinach Leaves
• - 3-4 cups Milk
• - Water
• - Salt as per your taste
• - Pepper as per your taste
• - 1 big potato chopped
• - 2 tbsp Olive Oil
• - 1 big Onion chopped
• - 3-4 cloves Garlic sliced
• - 2 Bay Leaves
• - 1 cube vegetable stock

Method:
• - Blanch the Spinach Leaves beforehand and keep it separate (it gets rid of that strong spinachy earthy smell)
• - In a big kadai, heat up olive oil
• - Add the onion, garlic
• - Sauté it till it’s golden brown
• - Add the bay leaves and potatoes
• - Sauté it for 2 minutes at medium to high heat
• - Pour in the water, milk and add the vegetable stock
• - Bring it to simmer
• - Stir in the spinach, salt and pepper
• - Cook it at low heat till the pot
