Spanakopita 1 bag of fresh spinach (16 oz) • 1 cup diced onion (or 1 large onion) • 1 cup chopped parsley • 1 + 1/2 cups crumbled feta cheese • 1 minced garlic • 1 egg lightly beaten • 1/2 tsp pepper • 2 tbsp olive oil • 1 pkg filo dough 1/2 cup melted butter In a skillet on medium heat, sauté onion & garlic until softened, remove from heat and set aside • In the same skillet, add spinach, allow to wilt completely. Transfer to a paper towel, allow to cool slightly and squeeze out excess liquid. Roughly chop the spinach, set aside • In a bowl, add cooked spinach, parsley, cooked onion, feta cheese, egg and pepper. Mix until combined. • Preheat oven to 375° • Roll out filo dough, brush butter on one sheet, add a second sheet of filo and brush with butter. Cut into 5 equal
