Ingredients:
 • 20g roasted buckwheat flour
 • 150g white flour
 • 280g whole wheat flour
 • 380g water
 • 100g leaven

9g salt

Process:
 • Autolyse flour and 320g water for 3h
 • Add leaven and mix for 2 min
 • Add salt and 30g of water and mix
 • Slowly add the remaining 30g of water while mixing
 • Rest for 30 minutes
 • Move the dough in an oiled bowl after performing the first coil fold
 • 3 more sets of coil folds
 • Preshape

Final shape

Total bulk fermentation time 5h, cold fermented for another 12h

I used the 3minutes score technique for baking❤️
