Spicy Salmon Nori Wrap  Makes 2  Ingredients:  1 (5 ounce) canned salmon (or baked salmon, shredded)  2 tablespoons mayonnaise  1 tablespoon sriracha (or hot sauce of choice)  1/2 cup steamed white (or brown) rice  2 teaspoons furikake seasoning, divided  1/2 Persian cucumber, very thinly sliced (either into strips or coins)  1/2 avocado, very thinly sliced  2 full sheets nori  salt and pepper to taste  1. In a small bowl combine salmon, mayonnaise and sriracha. Season with salt and pepper. Mix together.  2. Place a sheet of nori on a clean surface. Using scissors (or a knife) make a single cut in the middle of one side, until you get to the middle of the sheet.  3. In the bottom left corner, spread an even layer of 1/4 cup rice (lightly wetting your hands to make it easier to spread).

🧑‍🍳 INGREDIENTS:
 • 1/2 cup rice / cooked
 • 2 sushi nori seaweed sheets
 • 4 salmon slices raw/cooked 
 • 1 tablespoon sushi rice dressing 
 • 2 tablespoon teriyaki sauce
 • 4 slices cucumber
 • 1 tablespoon mayo
 • 2 little carrots / thinly sliced 
 • 5 drops Tabasco / hot chili sauce (optional) 
 • 1/2 lime juice

🧑‍🍳TIPS:
 • Use a simple potato peeler to slice the cucumber very thinly.
 • Moisture cooked rice with sushi rice dressing. It gives a fragrant touch to it and stickiness.
 • Leftover salmon from dinner the night before can be used as well.
 • Eat straight away after preparing, it is best when it’s fresh! 
 • To cut the sandwich in half its recommended to wrap in plastic.

Vegan Onigirazu Sushi Sandwich

A delicious seaweed recipe that makes use of the chickpea smash recipe. Normally sushi is off limits for vegans as it will always contain some kind of fish or at least be quite bland without it. However, in this recipe the chickpea smash resembles tuna. I could eat this everyday, it’s so good!

Ingredients (Makes 1 sandwiches):
 • 💚1/2 cup of chickpea smash (refer to my chickpea smash recipe posted recently) 
 • 💚2 nori sheets
 • 💚 1/2 avocado

Sushi Rice
 • 💚 1/4 cup of sushi rice + 1/2 cup water in the rice cooker
 • 💚 1 tbsp vinegar (can use any kind)
 • 💚 2 tsp sugar
 • 💚1 pinch of salt

Options For A Dipping Sauce
 • 💚 Soy Sauce
 • 💚 Vegan Mayo
 • 💚 Sriracha
