Source: @thetastebud   Authors note: As a little kid, my most requested Filipino dish was “red sauce.” My mom would ask me what I’d want for dinner and I’d say red sauce. That dish was beef kaldereta, a beef stew made with tomato sauce, liver spread and potatoes. I just liked eating the sauce with rice and some version just has a little Korean influence with the addition of gochujang aka Korean red pepper paste and some gochugaru aka Korean red pepper flakes. The heat adds another level to the kaldereta and the topping of cheese at the end reminds me of how Korean galbi-jjim is served at a lot of Korean American restaurants  3 lbs beef short ribs, washed, patted dry and seasoned with salt and pepper  • 3 tbsp cooking oil  • 1 qt Beef broth  • 1 14 oz can tomato sauce  • 3 bay leaves  •
