Cottage Cheese Breakfast Rounds Made by @foodiefromvt  Follow @foodiefromvt for more simple and delicious recipes   Here’s what you need:  1/2 cup cottage cheese 1 egg Sea salt Optional: black pepper, sesame seeds, everything bagel seasoning  Preheat oven to 400F.  Whisk the cottage and egg until combined. Spoon into 3-4 circles on a baking sheet lined with parchment paper.  Bake for 18-25 minutes until the top is lightly browned but soft to the touch. (The bottoms as shown in the video will be more browned than the top) Let cool for 5 minutes then remove and top with toppings.

Don’t knock it ‘til you try it! I based this recipe off of my greek yogurt fudge (that recipe is back on my @lilsipper page), but of course this time I’m using cottage cheese. I used 100% unsweetened pure chocolate which has no sugar or sugar alcohols - but if you are not used to a sugar free diet, of course you can use sweetened chocolate.  Ingredients: 1 1/2 cups cottage cheese 1/2 cup melted chocolate *see note above for what I used  Follow video for instructions.
