Vegan Onigirazu Sushi Sandwich

A delicious seaweed recipe that makes use of the chickpea smash recipe. Normally sushi is off limits for vegans as it will always contain some kind of fish or at least be quite bland without it. However, in this recipe the chickpea smash resembles tuna. I could eat this everyday, it’s so good!

Ingredients (Makes 1 sandwiches):
 • 💚1/2 cup of chickpea smash (refer to my chickpea smash recipe posted recently) 
 • 💚2 nori sheets
 • 💚 1/2 avocado

Sushi Rice
 • 💚 1/4 cup of sushi rice + 1/2 cup water in the rice cooker
 • 💚 1 tbsp vinegar (can use any kind)
 • 💚 2 tsp sugar
 • 💚1 pinch of salt

Options For A Dipping Sauce
 • 💚 Soy Sauce
 • 💚 Vegan Mayo
 • 💚 Sriracha

INGREDIENTS:  • - 1 cup sushi rice  • - 1 1/4 cup boiling water  • - 2 tbsp rice vinegar  • - 1 tbsp maple syrup  • - 1 tsp salt  • -rice paper sheets  • - Nori seaweed sheets  • - Filling of choice (I used cucumber, carrot, avocado and vegan tonkatsu sauce)  • - Sesame seeds  • - Oil for frying  INSTRUCTIONS:  • Rinse rice with cold water until the water runs clear.  • Transfer into a pot and add boiling water, cover with a lid and cook for about 15 minutes or until rice is cooked.  • Meanwhile, prepare fillings of choice, cut seaweed into smaller pieces and fill a large bowl with cold water.  • Transfer cooked rice into a bowl and season with rice vinegar, maple syrup and salt. Using a bamboo sushi rolling mat, place the sushi noir, cooked rice, cucumber, carrot & avocado. Roll and sprinkle with sesame seeds.

Save this post for later 🍣 Full disclosure, I’m not an expert sushi maker by any means. This is how I made sushi. I’ve never lived in east Asia and I have not taken classes. So please don’t come at me in the comments! 😂this is just how I make sushi! And seaweed on the outside is a little easier because you can wet the last inch of nori and wrap it over. With the rice of the outside, occasionally I will cut the extra Nori so it’s not too much rice or just double wrap it. It’s so easy and fun and the perfect way to entertain friends if you host a party.  • All you need is a bambo roller (you can purchase at a local Asian market or Amazon) (I wrap it in plastic wrap for easy cleanup)  • Seaweed (Nori)  • cucumber  • avocado  • asparagus  • jalapeño  • green onion  • carrots  • yuca  • sp
