Rabdi is essentially thickened & sweetened milk , flavoured with saffron mostly. Here’s how to make it: • Bring 2cup milk to boil, set flame to low, reduce until thick. Takes about 8-10mins. Add 1-2 cardamom and milkmaid/sweetener as per your preference. Cool down to room temperature and keep it refrigerated. • Cut bread into half, deep fry them on medium heat. • Prepare a simple sugar syrup. Water & sugar should be in 1:1 ratio. • Coat the fried bread in sugar syrup, and place on your dish. Pour the prepared rabdi. Garnish with almond. Enjoy!
