30min · 4 servings     Prep Time: 20 mins   • Cook Time: 10 mins  Serves: 4 buns  200g mushrooms (oyster are best, shiitake work as well)  • 1½ tbsp cornflour  • 3 tbsp neutral oil  • 1½ tbsp light soy sauce  • ½ tbsp mirin  • 2 tsp light brown sugar  • Julienned cucumber and spring onion  4 frozen folded bao   1) Using two forks, pull apart the mushrooms into shreds  • 2) Add the mushrooms to a saucepan and cover with cold water. Bring to a boil and, once boiling, cook for 2 minutes.   • 3) Drain the mushrooms and pat dry  • 4) Coat the mushrooms in the cornflour  • 5) Heat the oil in a frying pan on a high heat  • 6) Fry the mushrooms until golden and crispy, around 10 minutes. Do not let them burn.  • 7) Meanwhile combine the soy sauce, mirin and sugar. Set up a steamer and steam the ba

- Start by sautéing the mushrooms on high heat, add the cabbage, carrot and saute  - Add in the green onion whites, green chillies, garlic, ginger and cook for a few minutes - Add the mashed potato - Season with salt and white pepper and mix well - Add the soy sauce, vinegar and schezwan sauce and mix well - Take the mixture out on a plate and cool it down - mix the cheese into it  - Dip 2 sheets of rice paper in water until they soften  - Place the filling in the middle and form it into a log  - Fold the rice paper from both sides to form the log  - Roll the rice paper in sesame seeds  - Freeze the rolls for 15-20 minutes and then cut 4 pieces out of each log - Pan fry on all sides until golden brown and crispy  - Serve with a dipping sauce and enjoy!
