Ingredients 
 • 1 pie pumpkin (sugar baby)
 • 1 - 12 oz can evaporated milk 
 • 3/4 cup white sugar
 • 2 t pumpkin pie spice
 • 1/2 t salt 
 • 2 eggs
 • 1 pie crust 

Instructions
 • Preheat oven to 400 degrees and take our your pie crust to thaw
 • Clean pumpkin, scoop out inside and cut into pieces
 • Line a baking sheet with parchment and bake pumpkin for around 45 mins, until tender (or if your oven breaks, put it in the instant pot with an inch of water on a trivet for 20 mins!)
 • Reheat oven to 425 
 • Scoop out insides (remove skin) into blender
 • Add all other ingredients except crust into blender and blend until smooth 
 • Roll out crust onto pie tin
 • Pour pumpkin mixture into crust 
 • Bake for 15 mins at 425 and then reduce temp to 350 for an addi
