💚✨ The ZUCCHINI COTTAGE CHEESE FRITTERS are a low carb low calorie high protein perfect way to use up those zucchini! Just add a simple herb yogurt dip! Recipe by hungryhappens.  INGREDIENTS✅  • 2 cups grated zucchini, liquids squeezed out • 1 cup cottage cheese, drained • 2 eggs • 1/4 cup almond flour (or breadcrumbs optional)  • 1/3 cup grated pecorino cheese • 2 scallions, fine chop • 1 tsp Italian herb blend • salt and pepper to taste • Optional Dip: Lazy Tzatziki  INSTRUCTIONS📋  1) In a large bowl, combine the squeezed out zucchini shreds, drained cottage cheese, eggs, almond flour, grated cheese, scallions, italian herb blend, salt and pepper to taste. Form about 9 medium sized patties.  2) Heat a large skillet with 1 – 2 tbs olive oil.

Ingredients -

100g courgette (zucchini)
100g red onion
100g tomato
200g cottage cheese
3 medium eggs
Salt and pepper
50g reduced fat feta

Method -

1. Chop your courgette, onion and tomato and place it a bowl.

2. Add the cottage cheese, eggs and seasoning. Mix well.

3. Top with feta and bake for 30 minutes at 200C. Depending on your oven it might need a little longer.

HIGH PROTEIN VEGGIE FRITTATA   Makes 2 servings:   6 large eggs (4 whole, 2 egg white only)  3/4 cup low fat cottage cheese (strained to rid excess liquid)  2 tbsp feta cheese crumbles  1 large zucchini, thinly sliced  1 big handful of spinach  Salt & pepper to taste  Red pepper flakes  Season to your preference!   For me this was 310 calories per serving. Perfect savory breakfast or lunch! I’ve been making this lately and I love it.
