Syrup Ingredients

1 cup honey

1 cup blood orange juice

½ cup water

1 cup sugar

2 cinnamon sticks

1 orange peel

Baklava Ingredients

1-2 packs of puff pastry (make 3 layers)

1 ½ – 2 cups of nuts (walnuts, pistachios, almonds)

⅓ cup melted butter

½ cup sugar

zest from 1 whole orange

1 tsp of cinnamon

Pinch of sea salt

Syrup Directions

Add sugar, juice, water, honey, cinnamon sticks and orange peel to a saucepan. Let come to a boil then simmer for 30-40 minutes, until it reduces to a thick syrup consistency.

Baklava Directions

Finely chop nuts or pulse in a food processor. Zest 1 orange into ½ cup of sugar. Mix together so sugar absorbs oils from the zest. Combine sugar mixture with nuts and add cinnamon.

Combine baklava spread ingredients and blend about 1 minute until sticky but not perfectly smooth. 2. In a blender, combine waffle batter ingredients and blend until smooth. 3. Spray preheated waffle iron and add batter, cooking until golden brown. 4. Add baklava spread to each waffle, then stack and cut into triangles. Pistachio Baklava is one of those desserts I can never say no to. It’s juicy, crisp, nutty and chewy all at the same time and it’s absolutely delicious. It’s the perfect make ahead dessert too because it requires very little prep. Using shop bought filo pastry will make your life much easier.  Ingredients:  • 1 pack of filo pastry  • 400g pistachio nuts, finely chopped  • 150g butter, melted  For the sugar syrup:  • 1 cup caster sugar  • 1 cup water  • 1/2 a cup (vegan) honey  Method:  • Pre heat the oven to 175C. Finely chop the nuts and melt your butter. In a lined oven proof dish, layer pastry and then brush with melted butter. Repeat this 5 times before adding a sprinkling of nuts and then go again, 5 layers of pastry and butter and then one layer of nuts. Finish with the pastry as
