Vegan Harissa Tomato Gnocchi

This easy vegan harissa, tomato, and gnocchi recipe is perfect for quick weeknight meals or batch cooking. Ingredients 1 tbsp olive oil 1 red onion, finely diced 3 cloves garlic, finely chopped 1 roasted red pepper, thinly sliced 200g cherry tomatoes 1 tbsp harissa paste 1 tbsp dried oregano 1 tsp salt and pepper 400g fresh gnocchi 1 tsp dried parsley 1/2 lemon, squeezed 80g grated vegan cheese Instructions Fry diced onion in olive oil on low heat. Add roasted peppers, garlic, tomatoes, water, salt, pepper, and parsley. Fry on medium for 8 minutes. Cook gnocchi in boiling water for 2 minutes. Add 150ml gnocchi water to the pan, add harissa and squish tomatoes. Drain the gnocchi, add to the pan, and stir in vegan cheese. Add lemon juice, stir, and season. #VeganDinnerRecipes #EasyMeals
