I love melomakarona! It’s one of the classic Christmas cookies. I’m not taking a side in the melomakarona/kourabiedes debate…but in this case, I have to say, there’s something great about this particular cookie, made healthy (somewhat) with nuts and honey. Even better? Nuts are a symbol of good fortune — even more of a reason to reach for this holiday sweet!

• 2 cups Greek honey
Baking & Spices
• 9 cups All-purpose flour
• 1 Cinnamon, Ground
• 1 Cinnamon stick
• 2 cup Sugar

• 3 cups Greek olive oil, extra virgin

• 1 1/2 cups 170 to 228 g finely ground walnuts, finely ground

• 1/2 cup Orange juice

• Juice and 1 strip of zest from 1 large lemon
• 1 tablespoon soda
