• 200 grams (about ¾ cup) sourdough discard unfed, at room temperature
• 4 ½ cups all-purpose flour
• ¾ teaspoon kosher salt
• 3 Tablespoons unsalted butter melted and cooled
For the Filling
• ¼ cup unsalted butter softened
• ½ cup brown sugar
• ½ cup raisins optional
• 2 teaspoons ground cinnamon
For the Frosting
• 3 Tablespoons unsalted butter softened
• 1 teaspoon vanilla extract
• pinch of salt
• 1 ½ cups confectioner's sugar sifted
• 1-2 Tablespoons non-dairy milk, such as almond milk or regular dairy milk
