Mango Coconut Popsicles!

~Mango Coconut popsicles~
(Makes 6-8)
INGREDIENTS:
1 can full fat coconut milk
• 2 generous cups mango chunks (allow to thaw & save a few pieces for decoration)
• 3 Tbsp maple syrup
2 Tbsp lime juice
METHOD:
• 1. Pour coconut milk into blender then add lime juice and half the mango. Blend until smooth. Add remaining mango except 5-6 chunks.
• 2. Add 1 Tablespoon of maple syrup at a time then blend and taste it as you go to adjust sweetness. I needed 3 Tbsp in my batch😁
• 3. Cut reserved mango into small pieces then put a few pieces into the popsicle molds. Pour mixture over top and leave a bit of space at the end to add a couple more pieces per popsicle. Use a chopstick or utensil handle to gently poke the pieces down the sides about halfway. Check for air
