1 1/4 cup sugar, divided
• 1/2 cup flour
• 1 1/4 cup milk
• 3 eggs, separated
• 2 tbsp butter
• 2 tsp vanilla
• 1 1/4 cup coconut flakes, divided
•1 pie crust
1.preheat oven to 350 degrees
• 2.combine 1 cup sugar, flour, milk, egg yolks, butter, and vanilla in pot. Whisk together over medium heat until thickened. Remove from heat and mix in 1 cup of coconut flakes. Pour mixture into pie crust.
• 3.beat egg whites in bowl until foamy. Gradually add 1/4 cup of sugar until white peaks begin to form. Spread over pie and add coconut flakes. Bake for 10 minutes.
