Ingredients:
• 1/2 cup caramelized sugar syrup
• 1 cup chopped dates
• 1 cup grated carrots
• 1/2 cup chopped walnuts
• 1 1/4 cup All purpose flour
• 1 cup sugar
• 1 cup Vegetable oil
• 2 eggs
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 1 tsp Vanilla extract
Directions:
1. Caramel syrup-In a small sauce pan, on medium low heat, melt 1/2 cup sugar and 1/4 cup water. Once it turns deep amber color, keep the syrup to cool.
2. Preheat the oven to 350°F.
3. In a large bowl, add the dry ingredients.
4. Now put the chopped dates,carrots and walnuts into the dry mixture and mix until well coated.
5. Mix together the wet ingredients-oil,eggs,sugar and caramel syrup in another large bowl.
6. Now fold the dry ingredient mixture into the wet until well combined.
