Ingredients: 2 cups cubed fresh beets 1 red bell pepper 1 cup sliced carrots 1 cup red onion 1/2 cup @siggisdairy plant-based yogurt 1 tbsp lemon 2 tbsp olive oil 1/2 tsp garlic powder or 1 tsp fresh garlic 1/2 tsp salt 1/4 tsp pepper ✨The yogurt I use: Siggi’s plant-based coconut yogurt is my go-to yogurt because it's THICK, creamy, and packed with protein (which is hard to find in a dairy-free yogurt).
