If you wanna use your sourdough starter to be ready quicker you need to be giving a smaller ratio feeding. An example would be (1:1:1) one part starter, one part flour and one part water. If you’re wanting more time before your starter is ready to be used, you need to give it a larger feeding. A 1:5:5 ratio will take longer for the starter to rise. Pinterest  Why different feeding ratios?  Different feeding ratios peak at different times so you can plan accordingly.   On average, a 1:1:1 feeding will double in 4-6 hours. But what is 1:1:1? This is simply the ratio of starter to flour and water. So a 1:1:1 feeding has equal amount in grams of each of these things. For example, 50g starter, 50g flour and 50g water. When you use this ratio, the amount of starter is as much as the other ingredients so it will go through the “food” a lot faster.  As seen in the video, the 1:1:1 feeding has already peaked and is starting to fall at 4 hours, while the 1:5:5 feeding isn’t even close to doubling yet. When I first started sourdough, I didn’t fully understand the power of feeding ratios. They can seem complicated, but once you grasp them, they actually simplify your whole sourdough routine. At first, I’d just dump flour and water into my starter jar and hope for the best. I often started a loaf when I didn’t want to because my starter had peaked. I felt out of control of my sourdough routine. Then, I learned about feeding ratios. Picking the right ratio helps predict when your starter peaks and can even strengthen it.
