Moist Gluten-Free Coconut Layer Cake with Coconut Milk

This moist gluten-free, dairy-free coconut cake is made with canned coconut milk and my custom gluten-free flour blend (King Arthur Measure for Measure Flour works too). It's oven-baked until golden-brown, tender and fluffy! Slather it with cream cheese frosting and coat it with shredded coconut for extra coconut flavor.

• 2 1/2 cup Gluten-free flour blend
• 1/2 tsp Salt

• 1 tsp Xanthan gum
