Ladi pav (dinner rolls):
 • -2/3 cup (155ml) lukewarm plant milk
 • -1 Tsp each instant yeast and sugar
 • MIX
 • -1 1/2 cups (225g) flour
 • -1/2 Tsp salt
 • -1 Tbsp softened vegan butter
 • KNEAD/REST 2h/SHAPE into 6 balls/BAKE at 180C/360F for 20mins/BRUSH with vegan butter after baking
 • Patty:
 • -1 onion
 • -1 Chili
 • -2 cloves garlic
 • FRY in oil
 • -2 cooked potatoes
 • -a handful fresh cilantro
 • -1 Tbsp lemon juice
 • -a pinch of salt and turmeric
 • MASH and MIX/SHAPE into 6 balls
 • -3/4 cup (90g) chickpea flour
 • -1/2 Tsp each turmeric, salt and Chili powder 
 • -1/2 cup (125ml) water
 • MIX/DIP the balls in the batter fry or air fry at 200C/400F for 10-15mins
 • Dry garlic chutney:
 • -1/2 cup coconut flakes
 • -2 cloves garlic
 • BLEND/
 • -1/2 Tsp

The three different chutneys balance sweet, sour and spicy flavour notes that beautifully accompany the savoury potato patty, while the chura adds a satisfying crunch amidst the soft bun.
