Savor the delicate and refreshing flavors of Lemon Lavender Madeleines 🍋💜
 

Ingredients for 25 medium madeleines

For the madeleines batter

120g butter

Pinch of salt

1 tsp vanilla bean paste

1/2 tsp lemon zest

200g eggs (about 4 medium)

120g sugar

1 tsp honey

120g all purpose flour

7g baking powder

For the chocolate cover

120g white chocolate, melted

50g caramel chocolate (such as Valrhona Dulcey), melted

Instructions

Whisk eggs and sugar.

Add honey, lemon zest, vanilla and salt.

Add flour and baking powder and mix well.

Add melted butter.

Refrigerate the batter for at least 30 min.

Bake in a preheated oven at 180C degrees for 10 minutes, until golden brown.

Let cool down completely.

Mix white and caramel chocolate and add 1 tsp to each empty mold. Press a Madeleine into each mold. Freeze for 15 minutes to set.
