On a clean surface, make a well with the flour. In the center, add the egg yolks and salt. 2. Using a fork, begin to beat the egg yolks and slowly add the flour until its consistency firms up. 3. Knead until obtaining a compact dough and let it rest wrapped in plastic wrap for 10 minutes. 4. Then knead again until smooth and let it rest wrapped in plastic for at least 30 minutes before using.  🔔 Secret tip: Don’t skip the two-step kneading: the first hydrates, the second builds structure.
