Ingredients (makes 20-24)
 • 10 oz or 350 g low moisture mozzarella, grated 
 • 6 oz feta cheese 
 • 2 lb frozen spinach, thawed and drained
 • Salt to taste
 • 100 g phyllo pastry, plus more as needed 
 • 1 egg, can be substituted with oil or butter
 • Sesame seeds and flaky salt

Oil or butter, for brushing 

Instructions 

1. Heat the oven at 400°F or 205°C. 

3. Combine the cheese, spinach and pinch of salt in a bowl. Whisk the egg in a bowl.

4. Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on your work surface, drizzle a bit of oil or butter on top, then place another sheet on top. 

5. Brush the egg wash on both ends of the phyllo sheet. Sprinkle the cheese spinach filling on 2/3 of the sheet. Fold the phyllo forming a triangle,

Feta & Pistachio Phyllo Bites ❤️ they are so good + easy to make! These yield 12 bites! These were inspired by the rolled crispy phyllo by @lilygbakes Ingredients: * 1-16 oz package phyllo (18 sheets). * 8 oz feta (slice lengthwise into long rectangles). * 8 oz butter (melted, you might have some leftover). * 1/3 cup fig preserves. * 3 tbsp chives (chopped). * 1/4 cup chopped pistachios. * Honey to taste (about 1/2-1 tbsp per bite). * Chipotle powder to taste (I did about 1 tsp). * Salt and pepper to taste. Directions: 1. Fold your filo in half lenghtwise and then cut. Roll the half back up in the plastic it comes in and store for later use. 2. Ingredients 
 • 6 phyllo dough sheets
 • Oil or melted ghee, or butter to brush each sheet

Filling 
 • Ham
 • Cheese
 • Olives
 • Cranberry, dried

Method 
 • Preheat oven to 350°
 • Lined baking sheet with parchment paper.
 • Brush each sheet. Place all filling ingredients on the brushed sheet.
 • Gently roll into a log. Cut in 1-inch thickness, and place on a prepared lined sheet pan.
 • Bake until golden.

Baked Feta in Filo with Honey and Sesame seeds   Ingredients: * 3 tbsp melted butter or ghee * 200g pack feta, cut into 2 rectangles* 2 large filo pastry sheets * Thyme* 1 tbsp sesame seeds* Honey* Salad leaves to serve  Directions: Preheat the oven to 180C. Spread the filo sheet and brush with melted butter. Spread some fresh thyme over it and fold in half. Place the feta at the end of a rectangle and wrap the filo around the cheese, brushing with butter as you go to make it stick. Don't wrap too tight as the cheese will expand during baking. Brush the outside of the pastry with melted butter and sprinkle with sesame seeds. Bake for about 20-25 minutes. Remove from the oven, drizzle with honey and sprinkle more thyme leaves. Serve with salad leaves.
