Sure, they're a holiday table favorite, but honestly, we make them any time of year. They even show up at Sunday dinner with chicken to take a simple meal to the next level. Give these a try because:

  • Simple ingredients: With just 5 main ingredients (plus the usual oil, salt, and pepper), and you've got an easy side dish ready to pop in the oven.
  • Crazy good flavor: I'm not kidding-these are next-level delicious. Sweet, tangy, caramelized, crispy, and soft all at once. Basically, everything you want in a side dish.
  • So easy: All it takes just 5 minutes to cut the sprouts in half.

This recipe was heavily inspired by Pinch Of Yum. We changed up the amounts to reflect our taste as well as increase the recipe to serve more.

Maple Brussels Sprouts Ingredients

This recipe only requires a few ingredients! Amounts are in the recipe card below, but here are a few noteworthy tips.

Ingredients for the best roasted Brussels sprouts including maple syrup, dijon mustard, salt, pepper, oil, cranberries, and walnuts.
  • Brussels sprouts: Small to medium sprouts cook best, but if you get large ones make sure to quarter them so that the inside is soft when the outside is crispy perfection.
  • Maple syrup: Pure grade A maple syrup is the best option for this recipe. See this article for more information on different grades of maple syrup. Pancake syrup will not work. We find the best deal on maple syrup to be at Sam's Club or Costco.
  • Mustard: Just a touch of tang to balance out the sweetness of maple syrup.
  • Walnuts: We love to add these for a crunchy surprise.
  • Dried cranberries: These sweet and tart little goodies are amazing in this recipe.

How to make roasted maple brussel sprouts.

While this is a simple recipe, falling the steps and paying attention to the tips will ensure they turn out perfectly crispy.

Raw sprouts cut in half on sheet pan with olive oil, salt, and pepper.

Start by cutting small or medium sprouts in half. Large ones can be cut into fourths.

Place prussels between two sheet pans or onto one XL sheet pan and mix in the oil, avocado oil or olive oil are good choices, salt and black pepper.

Adding maple syrup and dijon mustard to pan of partially roasted brussels.

Bake for 15-20 minutes until they are golden and the outer leaves are crispy.

Remove the baking sheet from the oven, add in the walnut and drizzle everything with the maple syrup. Carefully combine until everything has a nice maple glaze. Bake for another 5 minutes.

Finally, sprinkle on the cranberries, toss, and serve immediately.

Hint: To avoid mushy Brussels sprouts use two sheet pans or this XL sheet pan.

Variations and substitutions

  • Instead of walnuts try pecan, pistachios, and pine nuts.
  • In place of dijon try stone ground mustard or spicy mustard, but we do not prefer yellow mustard.
  • Swap out the cranberries for chopped dried cherries or even blueberries.
  • Drizzle with your favorite thick balsamic glaze for sweet balsamic Brussels sprouts.

FAQs

How to get crispy Brussels sprouts?

First, make sure that the sprouts are thoroughly dried. Moisture is the enemy of crispiness. Second, be sure to roast at a high temperature. We like 425º to perfectly roast the outside while giving time for the inside to soften.

Can I use pancake syrup in place of the maple syrup?

Since pancake syrup does not have the same flavor the final dish taste like pancakes or waffles. Not what we are going for! Only use real maple syrup and you won't be sorry!

How to store and reheat

Before storing allow them to cool completely. Then store in an airtight container in the refrigerator for up to 5 days.

To retain crispiness, reheat in a 350º oven for 8-10 minutes.

Ingredients

  • 1 lb brussels sprouts halved
  • 2.5 tablespoon olive oil
  • ½ teaspoon kosher salt
  • Sprinkle pepper
  • ½ walnuts very roughly chopped or broken with hands
  • 2 teaspoon dijon mustard
  • 2.5 tablespoon maple syrup
  • ⅓ cup dried cranberries

Instructions

  • Preheat oven to 425℉.
  • Place brussels on an 2 sheet pans or on one extra large sheet pan - cut side down. Drizzle with oil, salt, and pepper. Roast for 15-20 minutes, or until the cut sides are golden and the leaves are crispy.
    1 lb brussels sprouts, 2.5 tablespoon olive oil, ½ teaspoon kosher salt, Sprinkle pepper
  • Remove from the oven. Add the walnuts, mustard, and maple syrup. Stir well, then bake for another 4-5 minutes.
    ½ walnuts, 2 teaspoon dijon mustard, 2.5 tablespoon maple syrup
  • Add the cranberries, toss, and serve hot.
    ⅓ cup dried cranberries
