Easy puff pastry appetizer ingredients

This recipe only requires a five ingredients! Ingredient quantities are in the recipe card below, but here are a few noteworthy tips.

  • Puff pastry: Buttery, flaky, and crispy-puff pastry is always a win! It can be found in the freezer section of your grocery store. Trader Joe's brand is our favorite.
  • Brie cheese: This extra creamy cheese is perfect for when you want to treat yourself or impress at a special event.
  • Raspberry jam: Use any jam you have on hand or love! If seeds aren't your thing, just grab a jar of seedless jam.
  • Thyme: The fresh thyme adds a nice touch that balances out the richness of puff pastry brie bites.
  • Hot honey: A drizzle of spicy honey, whether homemade hot honey recipe or store-bought, gives these bites the perfect kick of heat.

How to make hot honey brie bites

Begin by placing the wheel of Brie cheese in the freezer for 15-20 minutes. This will make it easier to cut. Then remove it and cut 48 ½ inch cubes.

Prep the mini cupcake pan by spraying it generously with nonstick spray. If you only have one muffin pan keep the second piece of puff pastry in the refrigerator until it is time to bake the second batch.

Lightly flour a flat surface. Carefully unfold thawed puff pastry. Using a rolling pin gently roll the pastry sheet out to 10x12 inches. Cut into 24 pieces by cutting into 4 equal pieces longways and 6 even pieces going the short way.

Place one sheet of puff pastry into each cup of the mini muffin tin. Prick the bottom of each piece of dough with a fork three times. Place one cube of the creamy brie cheese in each spot and fill with ½ teaspoon of jam.

Baked brie appetizers topped with cranberry sauce or raspberry jam.

Bake at 375ºF for 18-22 minutes. You are looking for golden brown edges. Once they come out of the oven drizzle with ¼ teaspoon of hot honey and sprinkle on the fresh thyme. Let sit for 5 minutes then transfer to a cooling rack or serving tray. Serve warm or at room temperature.

Hint: If the contents begin to overflow onto the top of the pan, use a rubber spatula to gently coax it back in while it is still hot.

Variations and substitutions

  • Cranberry sauce or cranberry jam: Either store-bought or this homemade Cranberries with Grand Marnier Recipe. Just do not use jellied cranberries that come in a can for this.
  • Apricot jam: A great late spring or early summer appetizer. Perfect for bridal showers or Mother's Day Brunch.
  • Blackberry jam: Basically any kind of berry jam is delicious in these.
  • Fig jam: Pairs especially well with cheese.
  • Fresh herbs: Rosemary, sage, or parsley would be delicious.
  • Balsamic vinegar glaze: For a tangy, sweet change try a syrupy dark glaze.
  • Nuts: For a nice crunch try pecans, walnuts, or pistachios. Try these Maple Pecans for something extra special!
  • Bacon jam: Caramelized onions and bacon for the ultimate savory option!
  • Crescent roll dough: This option isn't quite as good as puff pastry but if you can't get your hands on any crescent roll dough can be cut into the same size pieces.

How to make puff pastry appetizers ahead

These easy appetizers can be prepped ahead and placed in the refrigerator the day before and baked off when it is time. Just be sure to cover the mini cupcake pan with plastic wrap to keep the pastry from drying out.

Or bake these off, allowing them to cool completely. Place in an airtight container in the fridge for up to 3 days. Place back in the oven at 350ºF until warmed through.

FAQ

Do I need to cut the rind of the brie before baking it?

The rind of brie is edible, and for this recipe, you can leave the rind on when cutting the brie into cubes. No need to remove it before baking-it melts right into each bite!

Do you thaw puff pastry before rolling out?

Yep, puff pastry needs to be thawed but still chilled before you roll it out. Just let it thaw in the fridge, and keep it there until you're ready to use it. If it starts getting warm and sticky while you're working with it, pop it back in the fridge for about 30 minutes to cool down before continuing with the recipe.

Ingredients

  • 2 sheets of puff pastry
  • 8 oz brie
  • ½ cup raspberry jam
  • 2 teaspoon fresh thyme chopped
  • 2 tablespoon hot honey homemade or store-bought

Instructions

  • Place Brie in the freezer for 15-20 minutes. This will make it easier to cut.

  • Preheat the oven to 375 degrees. Generously spray a 24 count mini muffin tin with baking spray.
  • Lightly flour a flat surface. Roll out the sheet gently to 10x12 inches. Cut into 24 pieces by cutting into 4 equal pieces long ways and then 6 equal pieces going the short ways (see the photos in the post for a visual). Place a piece of puff pastry into each slot of the mini muffin tin. Prick the bottom of each piece of dough with a fork three times.

  • Pull the brie out from the freezer and cut 48 cubes that are about ½ inch each (see the photos in the post for a visual of the size). Place one cube of brie in each muffin tin (saving the remaining 24 cubes for the next round, preferably back in the freezer). Next, add ½ teaspoon of jam on the top of each.
    ½ cup raspberry jam, 8 oz brie
  • Repeat with second piece of pastry sheet and the remaining pieces of brie.
  • Bake at 375 degrees for 18-22 minutes. Drizzle with ¼ teaspoon of hot honey immediately. Sprinkle with fresh thyme. Let sit 5 minutes. Transfer to cooling rack or serving tray.

    only three stars because you actually need 2 blocks of brie for 48 pieces. the recipe describes doing the same for the second puff pastry (rolling it out and cutting it), but does not mention anywhere that you need 2 wheels of brie to have 48 pieces.

      Hi Jaycee, thank you for leaving a comment. You do not need 2 wheels of brie. You need one 8oz wheel. If you cut it into 1/2 inch pieces as directed, you should end up with 48 cubes total. They are small pieces, as pictured in the post. I do understand the confusion, as the recipe instructions said to cut 24 (1/2 inch) cubes, meaning to cut the first 24 cubes, then repeat a second time for the second sheet of pastry. I will update the recipe instructions to make this more clear. Thank you!
